Viscosity is how thick or thin an oil is, and specifically, how well it resists flowing. Thick, slow-pouring honey has high viscosity; thin, fast-pouring water has low viscosity. It's the single most important property of any lubricant, because it determines whether the oil actually forms a protective film between moving metal parts, or gets squeezed out and lets them grind against each other.
Why it matters more than any other spec
Every other lubricant property — additive package, base oil quality, certification — exists to support one job: keeping the right viscosity at the right place, at the right temperature, for as long as possible. Too thin, and the oil film breaks down under load, causing metal-to-metal contact and wear. Too thick, and the oil can't circulate fast enough, starving parts of lubrication and wasting energy as the engine or machine works harder to pump it.
Viscosity changes with temperature
This is the part that trips up new buyers: viscosity isn't a fixed number, it changes with temperature. Every oil gets thinner as it heats up and thicker as it cools down. A cold engine at start-up and a hot engine at highway speed need very different amounts of flow resistance from the exact same oil — which is exactly why viscosity grading systems (like SAE grades, covered in the next guide) specify performance at two temperatures, not one.
How it's measured
Viscosity is measured in centistokes (cSt) at a standard reference temperature — commonly 40°C and 100°C for industrial and automotive oils. A lab draws the oil through a calibrated tube and times how long it takes to flow a set distance; the result is the kinematic viscosity at that temperature. This is the number that ultimately gets translated into the grade printed on the pack — SAE 15W-40, ISO VG 46, and so on.

When you're sourcing lubricant for a fleet, a machine, or a market, viscosity is the first thing to get right — before certifications, before base oil quality, before price.
